iOS 17 is not expected for iPhone 8 and iPhone 8 Plus models. It is unlikely that they will be updated to iOS 17 as they were released in 2017.

The iOS 17 release date is expected to be officially announced at Apple’s September event. For the official announcement of compatible models, we will have to wait for Apple’s Worldwide Developers Conference in June. With the same conference, iOS 17 will be available as beta.
